Hand-picked on October 7, 2020, western exposure with long evening sun, blue-grey schist and a deep layer of red clay in the subsoil, harvested from two vineyards, low yields (30hl per ha), slow pneumatic pressing, spontaneous fermentation for 6 months in stainless steel, 4 additional months in wooden barrels on fine lees, fairly cloudy must, 100% clean harvest, bottled at the end of July 2021.
